Using an Escrow type service  helps with a safer and smoother transaction process. Escrow is not 100% scam proof but it surely  provides an easier transaction proceedure. I personally use Escrow in many transactions just to be on the safe side.

Many scammers would like the transaction to go very quickly, so using Escrow tends to throw them into a spin because the average time it takes to complete a transaction is 3-5 days. They tend to become more rushed and try to avoid using escrow which would raise some suspicion.
